I would like to caveat this post with the fact that I know the pictures in this post are less than stellar. Ever have one of those days where you’re so hungry that you can barely wait for the food to be finished cooking? Well, this was one of those days, so I snapped some photos quickly with my phone before we scarfed down the pizzas. And they were so good that I had to share them with you.
The first pizza was inspired by this delicious pizza we had at our friends’ wedding back in September. It was a picturesque wedding on a small farm and instead of your usual “chicken or fish?”, in rolled a giant stone pizza oven that served up a buffet of piping hot pizzas, each with their own unique twist. Our favorite was the Chili Thai Chicken Pizza that we succeeded in recreating at home.
The second pizza is probably, hands-down, one of my favorite pizzas of all time. For those of you that have been to Pizzeria Locale in Downtown Boulder and had their Mais pizza, you’ll know what I’m talking about. This indulgent pizza is such a treat, that I almost wish I had never discovered how to make it at home. There is no way this waistline can have a creme fraiche topped pizza once a week!
Sweet Chili Thai Chicken Pizza
Makes 1 14-inch pizza
Ingredients:
- 1 chicken breast
- 1 T. dark sesame oil or sesame chili oil (if you want some heat)
- 1 pre-made pizza crust or dough for one pizza
- 1/2 c. bottled sweet chili sauce
- 1 c. shredded mozzarella cheese or 4 oz. of fresh mozzarella
- 1/4 c. chopped cilantro
1. Preheat oven to 425 degrees.
2. In a medium pan, heat the sesame oil on med-high. Season chicken breast with salt and pepper and cook in oil until cooked through, about 4 minutes on each side.
3. Place pre-made crust or rolled out pizza dough onto a pizza pan. Spread the sweet chili sauce on like sauce.
4. Once chicken is cooked, cut into bite size pieces and wait for chicken to cool down a bit. Once chicken is cool, sprinkle bits onto pizza.
5. Top pizza with the mozzarella cheese and cilantro. Bake in the oven for 12-14 minutes.
Pizzeria Locale’s Mais Pizza
Makes 1 14-inch pizza
Ingredients:
- 1 pre-made pizza crust or dough for one pizza
- 4 oz. creme fraiche
- 1 T. minced garlic
- 5-6 slices of prosciutto
- 2/3 c. cooked corn kernels, cooled (from fresh or frozen corn)
- 4 oz. fresh mozzarella, torn into small pieces
- 2 T. chopped fresh basil
1. Preheat oven to 425 degrees.
2. Place pre-made crust or rolled out pizza dough onto a pizza pan.
3. Mix together the creme fraiche and minced garlic and spread over the dough like a sauce.
4. Tear off pieces of the prosciutto and place on top of the pizza, followed by the corn, mozzarella and basil.
5. Bake in oven for 12-14 minutes.
